Trying to figure out the drill for Red Dragon
Per are planning on driving up to Red Dragon today. I am reading and hearing different things about what time we need to get there. Don’t mind waiting a bit but also don’t want to be up there for 2 hours. What time is the pork ready? What time should we be there? If we arrive before the pork, do we go ahead and place our orders or do we have to wait until it arrives? Is there one order size or a couple of different sizes?

It's a rather easy process. Pork will be ready around 12:30. You order what ever amount you want, quarter pound, half, one or two pounds.
Considering Red Dragon has the coldest and least expensive drinks in town, spending two hours is not enough time for many visitors!
The pork is generally finished by 2.

Do they have other food should they run out of pork before we get there?
Also- is it fairly easy to get a cab there and back from the Skylark Area?

It's very easy to get a charter taxi from Skylark...anybody on the Skylark property can help you if you don't have your own driver.
Red Dragon only serves jerk pork and you have an option to purchase bread with the pork...usually hardo (thick) or peg (buns) bread.
They have a grocery store attached but it's limited to small snack type foods.
