IMO, if you want romance, the cliffs are the way to go. Any one of the cliff spots mentioned (Ivan's, Tensing, Rockhouse) would be perfect. However, If you interested in dining on the beach, I would recommend Kuyaba. My wife and I already did the 100 candles at Ivan's on our first trip, so this year for her birthday we decided to try a beachfront dining experience. The food at Kuyaba was excellent and the beach side tables were amazing.
Kuyaba also has a private table that is sometimes called the "Birds Nest". It sits atop a 2 story tower overlooking the resort and the beach. You have to get there early, however, since they don't accept reservations for the Birds Nest. It's first-come-first-served. I thought it would be easy to get on a Sunday night during the low season, but when we arrived at 7:00, it had been occupied by a group of people who sat there drinking all night.

It seems as if everyone has covered dinner options. Be sure to spend at least one day on the beach. Have a driver from Rockhouse drop you off at Idle Awhile for the day, whether it's on his Birthday or another day. It's a very special little hotel.
