Coco's banana bread would be hard to replicate. Not sure how they make it. Sometimes I think things just taste better there. Banana bread is so easy to make, though. The key is not letting it overbake, so it stays moist. lots of recipes on the internet. Here is my recipe:
2 cups sugar
2 cups plus 2 tbsp flour
1 cup oil (I use mazola)
4 eggs
1 tsp salt
2 tsp baking soda
5 mashed ripe bananas
optional: 1/2 cup nuts and/or 1/2 cups choc. chips
Mix all together and divide into 2 large or 3 small loaf pans. Bake at 350 degrees for around an hour (check with a toothpick).
Great recipe, but I use whole wheat. Really changes the flavor.

I could not resist this post! I make my father in-law Banana bread every other week, he loves it sooo much, he has it for breakfast for the week :) here's my recipe:
2 c unbleached flour mixed with 1 tsp sea salt, 1 tsp baking powder, 1 1/2 tsp baking soda
1 c sugar
1 stick of unsalted butter ( room temp)
2 large eggs (room temp)
4 mashed ripe bananas mixed with 1 tbls of milk & about 1 tbls of cinnamon
chopped walnuts
[I]pre heat oven to 325, grease or spray some non-stick on a regular sized loaf pan, mash the bananas add the milk and cinnamon set aside, in a large bowl with an electric mixer or by hand, mix the butter and sugar until well blended then add one egg at a time until fluffy. By hand add the flour mixture, add in the banana mixture and walnuts. Once everything is well mixed, pour into loaf pan, depending on your oven, bake for about 55 min-check with a tooth pic and as Maryann states do not over bake ;) [I]
My new favorite is the King Arthur flour double chocolate recipe for banana bread. It has sour cream in it, which makes it really moist.
If you want your banana bread to taste more Jamaican you need to add some Nutmeg, All Spice and Teaspoon of Vanilla.....it makes a huge difference....
I tried Maryann's receipe, used the King Arthur's whole wheat flour, it turned out awesome. Next time I will try Deanna's receipe, also using the King Arthur's flour. Thanks for your recipes.
This one is not like the CCLP banana bread but it's still pretty good...
Banana Rum Bread
Yield 9 x 5-inch loaf
1/2 cup (1 stick) butter
3/4 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
3 large ripe bananas, mashed
2 cups all-purpose flour.
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup dark rum (Myers) Appleton could be used also.
Preheat oven to 350 degrees F Grease a loaf pan.
In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, mixing well between additions. Beat in the vanilla extract and mashed bananas until fully incorporated. Mix in the flours, baking soda, baking powder, and salt. Stir in the rum.
Transfer batter to the prepared loaf pan and bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean. Cool loaf in pan for 10 minutes before removing and transferring to a cooling rack to cool completely.
Depending on your oven you may have to bake longer than 65 min. I usually have to add 5 to 10 min. extra.
The flavor of this bread benefits greatly by letting it sit overnight.

Glad the banana bread turned out awesome, Jeff. I've tried it with vanilla and different spices before but kind of just prefer the banana flavor but going to definitely try it with some rum and King Arthur's whole wheat flour next time.

While I have not yet tried Coco's banana bread, this recipe comes from our beloved housekeeper who was born and raised in Kingston, Jamaica. Crusher is so right about the nutmeg! I make a typical American style banana bread that is similar to what MaryAnn posted above, but this Jamaican recipe tastes just like the banana bread we get in Jamaica. :)
Some helpful tips: Always make sure you use overripe bananas as they are sweeter. Do not over mix batter and do not over bake!

Jamaican Banana Bread
2 cups all-purpose flour
1 tsp baking soda
¼ tsp salt
1 tsp ground nutmeg
½ cup softened butter
¾ cup brown sugar
2 eggs, beaten
4-5 overripe large bananas (should equal =2+1/3 cups mashed)
1 tsp vanilla extract
Preheat oven to 350 degrees
1. Place flour, baking soda, salt and nutmeg in a mixing bowl; stir and set aside
2. Beat butter and sugar together until fluffy; stir in eggs and vanilla
3. Mash bananas to equal 2+1/3 cups; mix into wet ingredients
4. Fold banana mixture into dry ingredients until blended; do not over mix!
5. Pour batter into a greased 4½-x 8-inch loaf pan
6. Place pan in oven and bake for 1 hour or until an inserted toothpick comes out clean
