Any recommendations? I don't want to go to the Spa. I have avoided finer type dining in Negril because there's so much good food but thought I'd like to try something different this time around.

Ivan's for sure, do the 100 candle dinner if you can.
I really like the food at Xtabi but wouldn't call it fancy. I have enjoyed food and service at LeVendome (Charela)
This next trip I would like to try Bongo's (Sandy Haven Hotel) and The Zest (The Cliff Hotel)
if your celebration is a romantic one Night of 100 candles at Ivan's is fantastic. It's for two people. Did this for Valentines and it was a hit!
Have enjoyed Bongo's but it sits at the front of the hotel and we felt a little disconnected from the water.
Almost all beach restaurants and resorts will setup a private table for a celebration on the beach. We've done that for a couple of birthdays.

Or one could get the private table on the upper deck at Kuyaba.
I would recommend the same. However, I once tried to reserve the upper deck at Kuyaba for my wife's birthday and they told me it was first-come-first-served. When we got there, the table was occupied by 4 German girls who stayed there long after they finished dinner, getting drunk. This was a couple years ago, so it might be worth contacting them to see if its now reserve-able.
In addition to Ivan's, we have also enjoyed a special dinner at The Lodge at Tensing Pen.
I agree with you about the Spa Retreat. Had a dinner there last trip - the food was pretty good, but the environment felt sterile.
Ivan's is great but Catch a Falling Star (Catcha) also has wonderful food.
Another vote for the 100 Candles dinner at Ivan's. I surprised my wife with it for our 5th anniversary. It was wonderful. Reservations required in advance.
Tensing Pen is always a good go to.
Rockhouse is transcendent at night, expansive deck overlooking a cove lit up turquoise (you can explore a few pathways near the water too), lovely flower-filled grounds, great service, Karl Ricketts's paintings adorning bathrooms. In my experience, the most beautiful restaurant in the world. Pretty good food too.
My only issue with Ivans is the one time there for dinner, service was entirely absent once meal delivered. Disappointing. Would give Ivans another chance... if only Rockhouse wasn't just a stroll down the road.

Been going for our anniversary for 29 years. Been to a lot of restaurants but on our special night we go to the seafood market across the street from canoe bar and they have the biggest lobsters and fish u see on the island. We talk to the head man in charge of the kitchen at our resort and tell him how we want it prepared. We always have a dessert made any thing we want. We set the time and have it delivered to the porch candle light dinner. We still pay the resort a tip so no one gets in trouble. Never had a bad one.
No doubt about it..Ivans is it..i take my girlfriend there every year for her birthday (Feb) & they never fail to amaze setting up a beautiful seaside table for us jyst in time for sunset
Rockhouse is beautiful, but we found the menu lacking. Too Americanized. Last time we went, we sat down, looked at the menu and left for LTU pub.
I have eaten at Kuyaba (beach) and Ivan's (cliff) and Rockhouse(cliff). Kuyaba has decent food and right on the beach - good service when I was there. Ivan's has good food and beautiful view, but I agree with whoever stated that service fell off a bit after food was served. Rockhouse is pretty good food, nice atmosphere. You can't go wrong with any of these if you are looking for ambience. I also enjoyed LTU pub - nice view, less crowded, excellent food. Very casual though, no need to dress up.
Rockhouse is a very beautiful and special place, I prefer it to Ivan's. Maybe drinks and an appetizer at pushcart then dinner at Rockhouse.
