Regularly make curried goat and oxtails. Also like to make fritters, and have done coconut cream pie a la Norma's - although once I realized how many calories went into it, I only made it once. But it was great!

Brown Stew Chicken!
If you are making jerk chicken and have access to amazon.com, order some walkerswood jerk marinade (the bottle that is wide at the bottom and narrows towards the top). It's fantastic! Huz also really likes the Walkerswood Jerk BBQ sauce. I order a bunch at a time to save on shipping and keep them in the pantry. We go through them pretty quickly as they can be added to a variety of recipes. Walkerswood also makes a cookbook (Walkerswood caribbean kitchen by virginia burke) featuring their products but there are some other great cookbooks that aren't so brand specific. Still, it is a good cookbook if you have access to their products or are willing to make some substitutions. I also love Helen Willinsky's Jerk From Jamaica: Barbecue Caribbean Style. It includes a lot more than jerk, despite the title.
Also - check out the link that marley posted. There are some good recipes over there. I posted a couple we made up/adapted and I love the rum cake recipe that is posted there too.
If you can find the book "Jerk from Jamaica" Barbecue Caribbean Style by Helen Willinsky, you will have it all covered from appetizers, to main courses, drinks & desserts. This book has so many great recipes in it. My favs are the Jerk Marinade, and the dry jerk seasoning. The dry jerk seasoning can be used for many things, and you can make the Jamaican coleslaw recipe from the book with it. I have never had a coleslaw in Jamaica just like this one, but it is oh so tastey.

make a lot if Jamaican/West Indian food at home...jerk chicken, jerk pork, brown stew chicken, curried chicken rotis, jamaican patties, tikka masala. Love spicy food :)

If you go to "Forums" on this board, you will find a link to some recipes for Jamaican cooking submitted by various boardies.
Easiest Jamaican recipe I make is oxtail. Throw everything in the slow cooker and cook all day, I dare to say what I make is the best I've had. Found the recipe on Allrecipes.com.
