Good luck! A fellow boardie from Chicago sent me some seeds. They grow and spread rapidly. One word of advice, watch out for insects. They seem to love those tender leaves.

Sweetness, some people have said they had luck finding them on eBay...I couldn't find anything but maybe you will have better results :-)
Wiki says Callaloo is the name of the dish which they use the leaves from amaranth to make.

I've found a ton of different varieties so I'm not sure which is correct but I'll include a link that may help. http://rareseeds.com/vegetablesa-c/amaranth.html
Green Amaranth is the botanical common name you can get it in green form or red Johnny's seeds carries them.
We grow a few thousand plants a year on the farm,the key is to keep them well watered and fed with nutrients.Slugs
like them at night so wood ashes spread around the base helps with them.Keep plants pinched back to avoid going to seed
to quickly.

The plants will go to seed quickly. Almost from the time they are an inch or so high, seeds will begin to sprout. We also have some problem with the leaves being eaten. I used chemicals for that (my bad). We have been growing callaloo successfully for a few years here in West Michigan and I have not seen squirrels bother them. Maybe because we feed the wild birds and sunflowers seed is always available at our all night diner.

I've read online that the seeds of the Amaranth plant are various colors. I've gotten seeds off of the callaloo plants in Jamaica .... the seeds I picked in Jamaica are very small, black seeds.
