Muzik: you realize pumpkin in Jamaica is different that pumpkin in the US? The pumpkin Jamaicans use is closer to a nut squash in the US, I also couldn't find cock soup till I realized it is CHICKEN soup!

And the Jamaican pumpkin takes alot LONGER to grow and mature. Save a few of the seeds to start in January, inside to get the full growing season. Where were you able to get the seeds from? I bought the pumpkin at the market in Jamaica, and kept a few for home.
I ordered my callaloo seeds on Ebay 6 or 7 yrs. ago. I had way too many plants for us to eat so some of the plants went to seed. Now they pop up all over my garden and I just transplant them to the area I want them. We've had a crazy spring here in Michigan so my callaloo is just now coming up but it grows fast and I'll probably be cooking it in a week or 2.
I use a Butternut squash for my pumpkin soup along with the cock soup. It's my husband's favorite.
I brought callaloo seeds home with me as well as three cans I have been rationing till it grows as well as Grace cock soup. I also use squash in my soup....
If you have a Mexican Market nearby, you can buy Calabezza, which is very close to Jamaican pumpkin.
I like coconut milk in my pumpkin soup.
Oh another thing, if you get more than you can use, cook, smash, and put into freezer bags. 2 cups in a bag, works well for just Jim and I. All this talk of Pumpkin soup, So I made some for supper from my frozen supply.
