We bought 24 up in Sheffield as they are hard to come by in Negril. We have them chilled but they were only a day old when we bought them so they were sitting out when we purchased them.

A farmer told me they have good 2 week shelf life before they need to be in the fridge. In the US they just keep them cold. Go to the Sav Market and they sell the fish right out of the hot box.

i have been to the Sav Market many times, i have also seen fish caught in the morning sitting , soaking all day , in the bottom of a boat,to be sold to be eaten, which do not get me wrong tastes great, in Canada , when we catch fish, we normally put them on ice, just funny , thats all, soon come

I have had only 1 bad egg in Jamaica. It was nasty and made a pop noise when cracked. From then on I always crack in a separate bowl, when crackin more than 1.

I have a small backyard flock and yes, they are safe to eat. If they are not washed the natural protective covering on the egg keeps them good for weeks on the shelf. The ones you buy in the US are already weeks old by the time they hit the stores and are washed and need to be refrigerated. I don't wash my eggs and never refrigerate them.

Yup..exactly. The eggs you generally see here in Negril are from small local area farmers & sold very quickly. In the larger grocery chains like Mega Mart they're refrigerated...
