Just booked our trip for April and we have the bug. We are home in Chicago and jealous of all the boardies currently in JA who get to eat fresh. Cooked up some ackee we brought back from Hi-Lo on our last trip. 1st time attempting ackee and saltfish (Hands down my favorite dish) and it is pretty darn close!! Mmm Mmm Mmmm.

I carried home canned callaloo last year and have only one left that I am hoarding.......brought seeds too hope they can survive the prairies. Sometimes you just need a taste!
That looks awesome. I grow my own callaloo here, it grows like a weed here.

So ok I was going to have this on another thread thanking PGW. Jerk chicken lasagna thank you for inspiring me made it twice now.Usually make it with venison or moose but made both venison and jerk chicken.
