    What are the easiest meal to fix in kitchette?

    I am having one major "brain fart"....we get tired of going out to eat for all three meals everyday. I will have access to a hot pot, single burner, fridge. And I usually shop at Shamrocks when I'm down there. I can't think of one easy meal to fix other that bringing instant oatmeal with me.....or soup......

    I'd suggest breakfast since it is pretty easy to make, and also doesn't require many ingredients. Some easy things to make...omelettes, pancakes, French toast, bacon, sausage and for lunch, how about a veggie salad, or a simple grilled cheese sandwich or cheese quesadilla? Personally, I never get tired of going out to eat whenever we are on vacation, ha!. I guess it's because I tend to cook a lot at home, so I really enjoy having someone else take over when vacationing. :-)

    Leftovers. I buy more than we need, and then use it for the next day's lunch. Or I'll get a whole chicken on the grill (I go to cheap thrills but others would do I'm sure) and then add to it leftover pasta or veggies from the night before. I know people bring pasta (travels easy).

    Where are you staying? I know the feeling about eating out too much. Sometimes you do get burned out. We always love a big breakfast, then a light lunch, followed by a nice meal. So my vote would be for easy breakfasts and lunches.

    Chop up fruits and veggies and make a vegan raw meal once a day?

    Or screw cooking and eat bun and cheese.....

    We are staying in a hotel with a fridge only. I'm bringing a toaster and a hot water kettle..and peanut butter. Will leave everything with whichever staff would like it. My husband is and early riser and likes his instant coffee...sacrilege I know I. The land of amazing coffee. I drink tea and am bringing loose tea leaves (in their labeled bags cause it kind of loos like ...well you know..). The toaster cause he gets up crazy early and can have a peanut butter sandwich so when I get up there isn't a mad rush to find breakfast

    We like to cook rice and peas with chicken. Add curry powder and coconut milk. Lasts about 3 days for 4 of us.

    We really enjoy cooking when we're in Negril. My husband makes a soup every couple of days, we usually have left over chicken from dining out and we buy potato, garlic, calaloo, chocho, carrot, onion/scallion etc and make a variety of different soups. Something about hot soup in the afternoon, I just love it!! We also like to make smoothies in the morning out of fresh fruit and veggies a great way to start the day.

    We buy whole chickens and boil them with spices and use them for sandwiches or with pasta. Also eggs,and toast. If you have a microwave it's nice to reheat leftovers weather prepared in room or from your favorite meal the previous night.
