As a final note, I just wanted to recommend our airport transportation, Phillip's Jamaica Tours - Phillip Kongal (he is a recommended driver on this site). We were delayed in Toronto for 1.5 hours and Phillip was there waiting for us with a cold red stripe. He drives a red plated oversized van - clean and air conditioned. We stopped at Mega Mart to pick up food and supplies - we were there for over an hour- then stopped for some jerk. He was extremely accommodating. He helped us with our bags and luggage to our condo. Highly, highly recommend him - he is very knowledgeable about the island, very patient and mature man, and most importantly a very safe driver. His rates are reasonable too.

We choose green beans because they are smaller (they get bigger once roasted) -easier to pack and cheaper. A friend of ours roasts their beans in a hot oven on a baking sheet - but you have to be careful that they do not burn. I roast them on stove in a heavy cast iron pan, stirring constantly. When they go through the first crack (like popcorn) it will be a light roast. You continue to stir until the desired colour depending on what type of roast you want, light, medium or dark. For a dark roast, it will go through 2 cracks but take off the heat right away. Pour the beans on a baking sheet to cool. We love Blue Mountain coffee and cant wait to try fresh roasted.

monica, thanks for the trip report. I have been off the board for a while as life got busy. It sounds like both you and your husband had a wonderful trip. Glad you made it by Fireman's cook pit for lobster meal. We did the same thing last year (splitting a large lobster). The one we had was cooked perfectly and the second time we were there he was cooking some octopus (I have never really been a fan of octopus) but the way he had cooked it was most excellent.
Well I guess you can start planning for next year :-)
