Hi Eco, just to respond, Canoe Bar has never sold 'head on ' fish. Yes they are easy to come by, and many restaurants have them. we buy mostly large (30+ pound ) fish from local fishermen and filet them on premises. The reason that you do not see many small fish snorkeling - as you mentioned- . is that they are being fished out, one of the reasons that we don't sell them. Spearing and netting of fish here (which is illegal I believe), coupled with lionfish , have decimated the local fish population. Larger fish have had many cycles of reproduction. All of that aside, a fileted fish is easier to portion and serve as the size and weight can be made consistent, and the customer actually ends up with more fish.
