This one is not like the CCLP banana bread but it's still pretty good...
Banana Rum Bread
Yield 9 x 5-inch loaf
1/2 cup (1 stick) butter
3/4 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
3 large ripe bananas, mashed
2 cups all-purpose flour.
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup dark rum (Myers) Appleton could be used also.
Preheat oven to 350 degrees F Grease a loaf pan.
In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, mixing well between additions. Beat in the vanilla extract and mashed bananas until fully incorporated. Mix in the flours, baking soda, baking powder, and salt. Stir in the rum.
Transfer batter to the prepared loaf pan and bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean. Cool loaf in pan for 10 minutes before removing and transferring to a cooling rack to cool completely.
Depending on your oven you may have to bake longer than 65 min. I usually have to add 5 to 10 min. extra.
The flavor of this bread benefits greatly by letting it sit overnight.

Glad the banana bread turned out awesome, Jeff. I've tried it with vanilla and different spices before but kind of just prefer the banana flavor but going to definitely try it with some rum and King Arthur's whole wheat flour next time.

While I have not yet tried Coco's banana bread, this recipe comes from our beloved housekeeper who was born and raised in Kingston, Jamaica. Crusher is so right about the nutmeg! I make a typical American style banana bread that is similar to what MaryAnn posted above, but this Jamaican recipe tastes just like the banana bread we get in Jamaica.
Some helpful tips: Always make sure you use overripe bananas as they are sweeter. Do not over mix batter and do not over bake!

Jamaican Banana Bread
2 cups all-purpose flour
1 tsp baking soda
¼ tsp salt
1 tsp ground nutmeg
½ cup softened butter
¾ cup brown sugar
2 eggs, beaten
4-5 overripe large bananas (should equal =2+1/3 cups mashed)
1 tsp vanilla extract
Preheat oven to 350 degrees
1. Place flour, baking soda, salt and nutmeg in a mixing bowl; stir and set aside
2. Beat butter and sugar together until fluffy; stir in eggs and vanilla
3. Mash bananas to equal 2+1/3 cups; mix into wet ingredients
4. Fold banana mixture into dry ingredients until blended; do not over mix!
5. Pour batter into a greased 4½-x 8-inch loaf pan
6. Place pan in oven and bake for 1 hour or until an inserted toothpick comes out clean
