I could not resist this post! I make my father in-law Banana bread every other week, he loves it sooo much, he has it for breakfast for the weekhere's my recipe:
2 c unbleached flour mixed with 1 tsp sea salt, 1 tsp baking powder, 1 1/2 tsp baking soda
1 c sugar
1 stick of unsalted butter ( room temp)
2 large eggs (room temp)
4 mashed ripe bananas mixed with 1 tbls of milk & about 1 tbls of cinnamon
chopped walnuts
[I]pre heat oven to 325, grease or spray some non-stick on a regular sized loaf pan, mash the bananas add the milk and cinnamon set aside, in a large bowl with an electric mixer or by hand, mix the butter and sugar until well blended then add one egg at a time until fluffy. By hand add the flour mixture, add in the banana mixture and walnuts. Once everything is well mixed, pour into loaf pan, depending on your oven, bake for about 55 min-check with a tooth pic and as Maryann states do not over bake[I]
