    Now I wish I had taken a picture of my dinner plate last night.....Curried Goat with white rice plus boiled banana, yam and dumplings and the dessert was sweet potato pudding. This was dinner at my parents home last night.

    I'd subtract the rice and peas and substitute a healthy dollop of Renta yam - as creamy as mashed potatoes! Or subtract the rice and peas and substitute some good "season" rice or pumpkin rice. I like rice and peas, but only if done the "old fashioned" way where grated coconut milk is used (not coconut milk powder) and most places in Negril skip this very important ingredient. It's a bit labor intensive maybe, but there's no comparison in taste and bland rice & peas gets really repetitive and boring as heck when served with every meal of the day, every day of the week.

    Ya got mi interest Captain!! Researched online as to what Renta yam looked like and descriptions of how it is cooked, served, etc. Definitely gotta have me some of that this trip!     Renta Pineapple Orange Drink
    Published Oct 26, 2005

    INGREDIENTS:

    1 lb Renta Yam
    1 cup fresh squeezed Orange Juice
    1 cup Pineapple chopped
    2 limes
    ½ lb granulated sugar
    2 oz ginger
    2 cups of water

    METHOD:

    Peel and boil Renta Yam until yam is soft. Allow to cool.
    Add yam to blender.
    Extract the juice from the 2 limes. Add to blender.
    Peel ginger and add to blender.
    Add chopped pineapple to blender.
    Blend together water, yam, lime juice, ginger and pineapple until smooth.
    Leave to settle for 20 minutes.
    Add Orange Juice.
    Sweeten to taste with sugar.
    Serve over ice.

    Wow...a Renta yam as thickener for a blended fruit drink? To me, that is oddly creative and something I will try. Though since I'm not on the island at the moment, the next best thing I can think of to substitute for it here in the US would be a boiled potato. I'm thinking that the drink will thick creamy and come out sort of "milkshake-ish". If so, substituting boiled potato (or the Renta when on the island) would be something people with dairy allergies could play around with - make their shakes without yogurt or ice cream yet still get somewhat the same thing. Will definitely have to experiment with this one!!
