I have been making jerk since the first time I went to JA in 88, it was always good but never the same as getting it in JA. I was told it was because I wasn't using pimento wood, so I started searching it out on the net and found a guy here in MN that imports and sells it. That truly was the ticket.

Yep, that is the ticket. We forgot pimento wood for a few cooks, and KNEW something was missing. Gotta have it!
