If you bought them from a wireless provider (such as AT+T) and have a contract, they are most likely locked and will only work on that network. If you bought them at an Apple store they may be unlocked.
HarryS is correct, though if you're in good standing with your provider they will usually unlock them for you if you explain your situation. You should be able to swap sim cards, but it doesn't always work, I've had mixed results in the past doing that. Whatever you do, don't use data if you don't get a local plan.
I am going to chime in with a resounding agreement with TAH on this one. I used data off my iPhone, creating a hotspot for my iPad on a trip a while back. The prices were beyond exorbitant, and I will never do that again. Now, if there is no free wifi for me to connect... I am not getting online.
If you get a Digicel sim they have very reasonable data plans. Worked great with the iPhones we brought in April.

You can get an unlock code for your phone online.
I have used iPhone and Android phones from home in Jamaica.
