I think this a case of which came first, the chicken or the egg. it is thought that the name comes from coconuts, due not to taste, but to the bread's hard exterior and softer interior and can be split (like a coconut), and coconut milk is used in the recipe. But one has to remember that it does take a hammer or machete to split a coconut unlike that tasty coco bread... hmmmm....
