No matter how good the knife, you got to keep it sharp. Cooks Illustrated had an issue on knife sharpeners. Chef's Choice won 1st and 2nd for electric and manual sharpener to boot. The manual is Chef's Choice 463 Pronto Santoku/Asian Manual Knife Sharpener for $33 on Amazon. Sweethome had a review of chef's knives at http://thesweethome.com/reviews/the-...or-most-cooks/.
