i've GOT TO ''say'' this
i know that ''chicken-thread'' is closed,
but there's something i wanna say .... need to say
there AIN'T nothing wrong with the Jamaican chickens
..IF you ever are served, buy, and/or eat some so-called bad-chicken .... such as it's to dry or something,,, it ain't Jamaica's fault or the chicken-grower's fault.
it's the fault of WHO-ever cook-ed that chicken. [[[ period ]]
this trip, i've eaten more chicken than i should-have
:-(
haven't had NOT ONE bad chicken 'whatever' .... breast, leg, thigh, wing, neck, feets ..... ALL were perfect-toe..!!!
.........haven't had any beaks or feathers, yet
i've had soup, jerk, baked, broiled etc etc --- ALL juicy and good tasting.
something-something,
i've *noticed*
ESPECIAL-ly with the jerk-chicken
they be-selling 'round Negril, on that beach road..::::::: it SITS over the fire waaaaaaaaaaaaaay-Too long. ............ especially if it's a slow day for the jerk-er.
on too many occasions,
i've seen a jerk-barrel with 3-4 pieces of chicken cookin'
for hours ........ ain't no way he can keep it moist that long .... no way
over-here
in Lucea,
i spend a LOT of time sitting on the Lucea-verandaH ::::: RiGHT-behind 2-jerk cookers .... and a couple others across the street ..... i've watch 'em set-up, prep and cook ------ been watching 'em for YEARS..!!..
they 'do' chicken *different* than they do in Negril ,,, for the most part.
......and their chicken be-selling FAST FAST FAST --- juice be drippin' ...... full-of-flavor ... even the jerk-pit smoke 'taste' good & juicy
again::>>> blame the chef for any bad chicken you may eat :::: especially if it's dry.
