OMG, that stuff is so good! I think that is the one that some folks call Christmas Cake. The best I ever had was Shark's mother's. She has since passed. Last visit, one of our maids made one and we bought some from her. If you ask...you will easily find someone that will hook you up! Enjoy!

I'd never heard of the term "black cake" before. Googled it...seems to be a Caribbean name for rum cake or Christmas cake. Asked a few friends here and they said they hadn't heard of it. But, I was going to say how great the rum cake was in Negril but then Crusher made me rethink my comment..LOL!
Yes, also known as wedding cake or Christmas cake.....will ask around. They did call it black cake at the stall we bought it from(Island Organix) at the MIRF.

This is rum cake aka Christmas cake. It's very expensive to make. Main ingredients are dry fruit that has soaked for a year in white rum but not JB it should be Wray and Nephew. Browning which gives it it's black color, red wine and flour of course. They baked 4 of them in my oven last year they also put a pan of water in the bottom of the oven when baking. A regular sized cake tin will cost you $4000 TO $6000 ja. It's one of the best cakes I've ever eaten.
Charela makes a good one but only at Christmas time. I have made it from a recipe from a woman I met years ago. Not quite the same ingred. but like a good, dark fruitcake. Love it!
We had a very, very good one when we renewed our vows at SMB years ago....but that one in Montreal, I can't stop thinking about it. We live fairly close to Montreal, but really don't have much opportunity to get there.....just for things that are really important to us, like the reggae festival.![]()
