Most any currency can be used...US, CAN, Pounds etc...anything that can be exchanged at a bank or cambio here.
It's easier for a Jamaican to receive Jamaican currency...but those in the tourist industry are used to exchanging at the bank or cambios on a regular basis.

I always tip over and above but, who gets the gratuity that is listed on the bill? Does that go to the server, bartender etc.
I bring 2$ bills..that goes over big..
No matter which currency we use, we always put the tip in the hands of the server - to be SURE they get it!

I also give tip in hand whenever possible. But I will also put something on the gratuity line. By law that money is divided by all the staff so those not in tipping jobs get a taste as well. And must be documented for tax purposes.
Sing unto God, sing praises to his name: extol him that rideth upon the heavens by his name JAH, and rejoice before him. KJV Psalm 68:4
I have asked that question at the Hotel where we stay as they put a 10% "hotel service charge" on all bills. I asked how that money and tips were handled. I was assured, and had it confirmed by other employees, that all the "service charge" money is split between the behind the scene workers who do not normally get tips - gardeners, laundry people, bakery workers, dish washers, back office employees, etc..... All the tip money goes to the server who served you, whether it is cash or put on a credit card. It is up to the server to split the tip with cooks, bus boys etc...
