    we cook a lot of fish when we're in negril, so limes, garlic, scallions/onions, scotch bonnet peppers, thyme, dasheen/yam/potato, coconut milk and some sort of easispice seasoning


    the easispice looks interesting. How do you use it? Just replace salt and pepper when seasoning fish and meat? Used in soups and stews? Mixed with oil for a rub? All of the above

    pretty much all of the above, especially for the one i posted above.

    i got a very simple easispice seasoning when i was there in march that i really like. it just has salt, pepper, garlic and pimento so you can replace salt and pepper or garlic salt when you're cooking.

    the one i posted above has a lot more ingredients (including flour), so i'd be more likely to use that one for something like fried chicken or brownstew whatever.
