Andy, coffee off the shrub is called coffee BERRIES, and can range in color from green-yellow-red; "ripe" when mostly red but they don't all necessarily come ripe at the same time hence the various hues. The coffee berries are dried, and the skin removed (from most varieties-for better flavor). The remaining product is called a coffee BEAN, or green coffee bean before it is roasted. When roasted it changes color to the familiar coffee bean we know. IRIE! *IG
