My boyfriend and I stayed at The Caves, 5 yrs ago, and you are in for an amazing time! They offer a private romantic candlelit dinner in the lower cave, so try to reserve that ahead of time if you are interested. The staff is extremely attentive and will go out of their way to see that you have pretty much anything you want, yet they seem to also know when to stay back and give you the utmost privacy. And, yes, no worries, you can definitely watch the NBA games there on the huge tv in their lounge which has all the cable channels too. If you would prefer to be around more people, you can always go right next door to Rick's Cafe and watch it there.
We have since been staying on the beach at another favorite place, Idle Awhile, and I'm pretty sure you can still have lunch there, and enjoy their beach area even if you aren't a guest. But, you might also find that once you get to The Caves, you won't even want to leave the peaceful seclusion. Bring lots of US $1 and $5's, as they come in handy for tips. Most places won't have change for larger US bills, but you can always go to the cambio and instead get some Jamaican dollars. Sweetness gave you some really awesome advice above, regarding some local places to try out.

Oh, and Anthony just reminded me, they made this incredible drink there from fresh watermelon juice and rum. I forgot what they call it, but try it!
