Yep, the 7pm start is pretty firm, but you can show up any time really, however I think there is a cutoff for the buffet though at some point but you should have plenty of time to not have to worry about that
I think the Ricks for sunset then Seastar for dinner is a great idea.
Everyone should see Ricks at least once for the experience but the food and drinks are way overpriced and not good at all so I usually tell folks go early, check it out then leave and go to LTU or Ivans for sunset dinner because it is the same view with less crowds and better food, drinks, prices
Sunset this time of year is around 5:30 PM in Negril; so it looks doable, Seastar isn't far from Ricks Cafe.

Sunset is around 5:30pm to 6pmish between now and year end. Rick's empties out quickly after the sunsets. Plenty of time to walk from Rick's Cafe to Seastar in time for the 7pm show. Seastar has a nice island vibe!

But my parents have never been, so I have to take them.

Rexy is the opposite direction from Seastar. If you have time before Seastar you can take them to Ivan's. It's on the way and you can check out Catcha.
