i'm not so sure about the *harvesting* "..like you do lobster.." thing-y
Me no know what *kind* of crabs Bentley is serving, BUT:::>> my *experiences with crabs in Jamaica have been those ugly-ugly grey-ish colored land-crabs that reside in the Negril-swamp (aka Great Morass).
My first taste of Ja-land-crab was *served* by a homeless-guy who lived in the swamp.
He had some cooking in a little pot, over a wood fire --- he offered to share, and i accepted.
I felt kinda funny, 'cause there were a lot of crabs in the area, scurrying around, and popping in & out of their holes. Thought they might attack, and seek revenge 'cause i was eating some of their kin-folk.

Personally, I"ve never tasted/had any crabs from the sea. They're there, but I haven't had 'em, yet.

the Ja-land-crabs i've eaten tasted ok ---- not like the Chesapeake Bay crabs (hard & softshell) that I'm very familiar with. (to-me) the Ja-land crabs have such a bland (i.e., no taste) flavor, you need a heap of OldBay or some-such seafood seasoning to jazz 'em up.
As for "..harvesting..",
I suggest making your next Negril-trip sometime about mid-Summer, when the crabs are running (literally) all over the place.
'tis best-est to do the 'harvesting' at night. They don't like the hot-hot Ja-sunlight. It kills 'em --- kinda sorta like vampires.
in fact, one *could* go-out to the main-road just after sunrise, and probably find a few crabs dying along the roadside:::: still fresh, and won't try to run away,,, and probably too-weak to grab you with one of those claws.

Once upon a time,
i met a lady, who had hired some guys to go-into the swamp, to catch crabs for her.
Her car was stuffed with several large sacks of those ugly-critters.

apparently they don't have land-crabs in Kingston, or maybe Negril crabs are *special*
